1. Tacos or Lettuce Wraps

Ingredients:

  • Romaine Lettuce Hearts

Instructions:

  1. Warm up your Brown Rice Taco Bowl
  2. Fill the lettuce wraps or taco shells of your choice
  3. Top with pickled jalapenos for extra crunch & spice!


2. Nachos

Ingredients:

  • Brown Rice Taco Bowl
  • Cheese of choice (We used Vegan Queso!)
  • Guacamole
  • 1 Lime

Instructions:

  1. Warm up your Brown Rice Taco Bowl
  2. To a plate, add tortilla chips of choice
  3. Top with Brown Rice Taco Bowl, (vegan) queso, and guacamole
  4. Add a squeeze of lime and enjoy!

3. Burrito

Ingredients:

  • Tortilla
  • (Dairy free) Cheese
  • Avocado
  • Hot sauce

Instructions:

  1. Warm up your Brown Rice Taco Bowl
  2. To your tortilla, add your Taco Bowl, cheese of choice, sliced avocado, and hot sauce
  3. Roll it all up
  4. Pan fry for 2-3 minutes over medium heat
  5. Cut in half and enjoy!

4. Enchiladas

Ingredients:

  • 1 container of Splendid Spoon Brown Rice Taco Bowl, warmed through (Substitute in Tomato Quinoa Chili, or Green Tomatillo Chili for enchiladas verdes!)
  • 6 flour tortillas
  • Vegetarian refried beans
  • Can of diced green chilies
  • Shredded cheddar & jack cheeses (or vegan cheeses of your choice)
  • 1 jar of salsa

Instructions:

  1. Place a decent drizzle of the salsa in the bottom of a baking dish
  2. In a shallow dish pour about 1/2 of the salsa and dredge each flour tortilla before filling
  3. Add 1-2 tablespoons of your Grain Bowl, 2 tablespoons of beans, a teaspoon of green chilis and a sprinkle of jack cheese to the tortilla. Roll tight and place the seam side down in the baking dish.
  4. Finish all tortillas then pour the salsa over the top of the enchiladas. Top with cheddar cheese. Cover with foil and bake at 375 for 35 minutes. Voila!! Delicious.
  5. One enchilada is very filling with a side salad. You can top them with onions, olives, green onions or any topping you desire.

5. Stuffed Peppers

Ingredients:

  • Brown Rice Taco Bowl
  • Bell Peppers
  • Tomato Sauce
  • Shredded Cheese (optional)
  • Avocado
  • Lemon Juice
  • Cilantro

Instructions:

  1. Add your favorite tomato sauce to an oven safe dish
  2. Cut two bell peppers lengthwise and place at bottom of pan over sauce
  3. Fill each bell pepper with Splendid Spoon Brown Rice Taco Bowl
  4. Top with more tomato sauce and place in oven at 350 degrees for 30 minutes
  5. *Optional* Add shredded cheese and bake for 4 more minutes (skip step to keep meal completely vegan)
  6. Top with sliced avocado, lemon juice, and chopped cilantro
