This week, we’re peeking into the fridge of holistic health coach, Chloe Labbate.

Splendid Spoon: Hey Chloe! Tell us a little bit about yourself.
Chloe: I’m a Holistic Health Coach and Intuitive Energy Healer from Las Vegas. My fascination with food began as a kid, when I would help my mom cook, and spend countless hours watching Food Network. When I was 13, I became vegan, and started getting more interested in researching nutrition and healing with food. I love helping people transition into more mindful, plant-based lifestyles.

SS: What are the 5 staples you can’t live without?
CL: Homemade cashew sauce, any sort of fermented vegetable, avocados, berries, and homemade apple cider vinegar drinks! I like to make things at home whenever possible — it gives me a deeper connection to what I’m putting in my body.

SS: What’s the weirdest thing in your fridge?
CL: At the moment it has to be the big hunk of jackfruit. Jackfruit is so exciting to me! The fact that you can make something so similar to pulled pork from fruit is amazing! [We need to try experimenting with jackfruit more! — Ed]

SS: What’s your fave sweet and what’s your fave savory?
CL: My favorite sweet right now is watermelon. I don’t know if it’s because of the changing season, but I can’t stop thinking about watermelon.

My favorite savory is crunchy baked chickpeas with salt and pepper. It definitely satisfies my need for something salty and crunchy at the same time.

SS: If you were one thing in your fridge, what would it be?
CL: I love this question! I would say I most relate to orange carrots. I have had photos taken of my aura a few times, and it always came up as orange! Also, I know that the color orange has to do with creativity, and I’m a creative person.

SS: What food do you turn to when you want something comforting or nostalgic? Although we eat to keep our bodies strong and healthy, food also connects us to our past, to friends, and to different times in our lives.
CL: My go-to comfort food is gluten-free pasta with my homemade raw cashew sauce and roasted broccoli. I used to love fettuccine alfredo as a kid, and this really brings me back to that meal. [This sounds like amazing vegan comfort food! Yum! — Ed.] I love always having this sauce on hand because it can even be tweaked into a mac and cheese sauce by adding a little nutritional yeast!
